I was able to create a new Mini Chicken Chimichangas appetizer recipe using Kraft Fresh Take as part of a sponsored post for Collective Bias.  All words and opinions are my own.

I love experimenting in the kitchen.  At least a few times per week you can find me in the kitchen trying completely new recipes I find on Pinterest, duplicating something delicious I tried at a party, or giving our family favorites a little twist.

We frequently went out for Mexican food when we lived in Florida, but those restaurants don’t abound quite as much in Kentucky.  Because we missed those foods I started trying my hand at different entrees that we had regularly ordered: quesadillas, enchiladas, churros, chimichangas and more.  The chimichangas turned out particularly well and earned a regular place in our monthly meal rotation.

Recently while shopping at Walmart I noticed the Kraft Fresh Take kits in the cheese section.  We’ve used them in the past to change up our baked chicken or pork chops, but that day I had chimichangas on the brain.  It made me look at the packaging a little differently, wondering if I could use it to spice up our Mexican night. For tailgating season as part of a sponsored post for Collective Bias I made one of my favorite tailgating recipes, Buffalo Chicken Mac & Cheese.

Fall means different things to different people: changing leaves, pumpkin patches, cooler weather.  It means all those things to us, as well, but the biggest thing that fall represents around here is football.  Football is serious business here in Kentucky.  We have lots of college teams that we love to support, plus two or three NFL teams within relative driving distance.

Lots of football means lots of occasions to eat (something else Kentuckians take pretty seriously).  Whether it’s tailgating at the game or having friends and family over to watch the game, there are plenty of dips, lots of chili and casseroles, burgers and ribs, and tons of sweets.  I have a variety of different recipes that I like to rotate through, but one thing I almost always make is my homemade Buffalo Chicken Mac & Cheese.

Buffalo Chicken Mac & Cheese is great for tailgating because it combines that great flavor of wings with delicious, comforting mac & cheese all in one dish.  It’s easy to double, triple, half – whatever you need for the size of the crowd you’re serving.  It’s also fairly easy to cook.  The only downside to making it was that it took a little longer to assemble than I would have liked. I participated in a campaign to create Triscuit recipes on behalf of Mom Central Consulting for Triscuit. I received products to facilitate my review and a promotional item as a thank you for participating.

I’ve always loved Triscuit crackers; they’re truly an iconic snack.  For me, it’s always been about the satisfying crunch when you bit into it.  I also like how a Triscuit holds up to whatever you decide to pile on it.

I thought the crackers were pretty perfect the way they are, but after a hundred years, there’s a new twist on Triscuits.  In addition to the traditional wheat, they’ve now added brown rice to the mix.  Taking the opportunity to tempt your taste buds one step further, sweet potatoes and red beans have been baked into some varieties, also.

Thank you to Bertolli for providing the olive oil used to make my Parmesan Roasted Asparagus recipe.  All words and thoughts are my own.

Up until the past few years, I was convinced that I didn’t like asparagus.  Granted, I couldn’t ever remember actually trying asparagus, but that doesn’t really matter, right?  You’re allowed to know what foods you’ll like and won’t like just by looking at them.  Aren’t you?

Then a few years ago we were at our local farmer’s market in Florida and lo and behold there was a whole stand of asparagus that day.  Hubby wasn’t really sure if he liked asparagus, either, but we are always looking for a new side to pair with our proteins, so we decided to go for it.  I consulted with the attendant at the market to get her thoughts on what makes “good” asparagus, and we took a bunch home.

National Kids Take Over the Kitchen Day is this Friday, September 13th.  I love any excuse to get cooking with kids in the kitchen.  Not only does cooking help teach math skills, it’s also an important life skill; they’re going to need to feed themselves some day, right?

It’s not a day that existed when I was a kid, but I spent plenty of time in the kitchen baking treats and making dinner for my family.  I baked a Cookie Monster cake and decorated it by hand – all that blue fur with a “grass” decorating tip – for my brother’s 3rd or 4th birthday.  And I regularly made dinner for my parents on their wedding anniversary.

While Bubbles is a little young to let loose in the kitchen on her own, she absolutely loves to help prepare meals.  She spreads her own peanut butter and jelly on her sandwiches, helps pour water for cooking mac & cheese, and measures out ingredients for cookies and other baked treats.  She’s also great at adding cheese and other toppings to pizza.

I reached out to some fellow bloggers and others to put together a list of recipes that your kids will be able to make either on their own, or with minimal help (like putting something in and taking something out of the oven).  There are also a couple of recipes that you can do together with younger kiddos.  Hopefully you’ll end up having dinner prepared and served for you on Friday.  But don’t forget – the cook doesn’t clean, so it may be your turn to do the dishes!
