There are lots of yummy treats during the Christmas holidays.  Cakes, cookies, brownies, cheesecakes and more.  I love to make a wide variety of them, but they can take a little time to bake and assemble.  So what can you make when you have guests on the way or when your kids remind you that they need to take a treat to class in an hour?

Try making these yummy marshmallows.  With colored candy coatings and festive sprinkles, they look like the gourmet marshmallows you buy from confectionery stores but are low-cost, quick and easy to do.

DIY Gourmet Christmas Marshmallows

Ingredients:

1 bag marshmallows
1 bag colored candy coatings in desired color (I used green)
Christmas- themed or -colored sprinkles

Tutorial:

Pour sprinkles into a shallow bowl.  Set aside.

Place approximately 3/4 cup candy discs in a microwave-safe bowl.  Heat on HIGH for 30 seconds and stir.  Heat again on HIGH for an additional 15 seconds, and stir.  If discs aren’t fully melted, continue to microwave in 15-second intervals.

Dip marshmallows, one at a time, in the melted candy coating.  If you press down and then gently twist back and forth you get mostly nice, smooth finishes.  Immediately hold dipped marshmallow over bowl of sprinkles; use a spoon or your fingers to scatter them sparingly over the top.  You can try dipping them right into the sprinkles if you’d like.  For me there was too much coverage when done that way, but you might prefer it.  Play around with them to find your perfect results.

I chose green for my candy coating but you can change these up easily.  Red, blue (for a winter theme), or even milk or dark chocolate would be great.  I think my next ones will be winter ones and I’ll do a light blue and then sprinkle with white non-pariels to look like snow.
