Diabetic Friendly Easter Basket Ideas for Kids & Adults

As you know, Ashley (A1) was diagnosed with diabetes when she was really young.  While diabetics can have sugar and chocolate, I try not to over-load her Easter basket with those items so that she can more easily enjoy the holiday.  I generally limit the sugary treats to a couple of her favorite brands and then finish the basket out with both food and non-food items.

Quick & Tasty Frozen Lunch Options from ConAgra #FrozenFacts

Frozen Lunch Options from ConAgra

I really enjoy cooking which a lot of you probably know from the number of recipe and meal ideas I’ve shared with you over time.  When it comes to lunch, though, I rarely find myself in the mood to cook something.  I also don’t usually find myself with the time to cook lunch for myself, to be honest.  By the time I’m done making lunch for Bubbles and then feeding her, the afternoon is already marching on and there are tasks that need to be completed.

Thankfully there are a number of frozen entries with which I can keep my freezer stocked.  This makes it very convenient to grab-and-go even if the “go” part is only as far as the backyard to watch Bubbles play.  Of course, convenience isn’t the only consideration when it comes to lunch.  I actually have quite a list of requirements.  I want them to be low in fat and calories, use fresh ingredients, and be a decent source of fiber and protein.  Oh – and they have to taste good (kind of the most important part). Iron Man 3 Opens May 3, 2013

Iron Man 3 Opens May 3rd

I can’t believe that Iron Man 3 opens in just over a month!  It’s one of the movies I’ve most been looking forward to all year (since it was announced last year, actually).  Actually, the whole family is pretty anxious to see it.  Bubbles will definitely be spending a couple of hours with Papaw and Grammy that night so everyone else can go.

If you can’t wait until the May 3rd opening you might be in luck.  If you head over to the Iron Man 3 Facebook page right now you’ll have the chance to win a trip to Los Angeles for the April 24th world premiere!  That would be one exciting trip.  But do hurry – the sweepstakes ends at midnight EST on Wednesday, March 27th.  There will be one winner per day.

Will you be seeing Iron Man 3 opening weekend?

Savory Cheese Biscuit Recipe from Gooseberry Patch's "Weeknight Dinners"

Rustic Cheese Biscuit Recipe

Rolls are one of my favorite things about going out to eat at a restaurant.  Almost all of them bring you a basket of rolls or biscuits, loaves of bread, or bread sticks.  Some have great flavored butters or provide you with dipping sauces.  No matter the form or the accouterments  it’s always good.

We do try and serve a few of our own bread sides with our meals at home, too.  Usually it’s heat-and-serve rolls or garlic bread, homemade cornbread, or on occasion a homemade loaf of bread.  One thing I’ve wanted to try that I hadn’t so far, though, were cheese biscuits.  They are a family-favorite when we go out to eat (Ashley says she could live on them) and I hoped that any homemade variety that I tried would be similar in taste.

Then I found this Savory Cheese Biscuit recipe in the new “Weeknight Dinners” cookbook from Gooseberry Patch.  The recipe was submitted to the cookbook by J.C. Schmeltekopf and they are extremely fast and easy to make.  They’re also really good.  Hubby had one and said, “Hey that’s good”.  Five minutes later he was saying, “Hey that’s really good” and kept commenting on them throughout the night.  Always a good sign! Thanks to Hershey’s for providing us with a basket of treats.
Making Easter Memories with Hershey's

Create Easter Memories to Last a Lifetime

Easter has always been one of my favorite holidays.  It’s in the spring so normally we had a bit of sunny, warm weather (though in northern Maine snow on Easter wasn’t out of the question) so when my brothers and I would wake up we’d find the sun shining through our windows and spotlighting dozens of eggs and other little treats scattered across the floor.  An empty basket was always by the foot of each of our beds and we’d follow the trail down the hall, down the stairs, and all through the house, collecting jelly beans and chocolates as we went.

Making Easter Memories

It’s a tradition that I’ve been excited to share with my own family.  Last year was the first year that Bubbles was mobile and interested enough to toddle around and collect a few eggs in her basket.  She was delighted with the entire process so I think this year will be twice as fun for her.  She’s already talking about the Easter bunny, baskets, eggs, and chocolate.  It was very exciting for her to already have receive one basket.  As it is she loves when the delivery folks knock on our door; she has such fun “helping Mom” open boxes.  So when we recently opened a box that contained an Easter basket full of yummy Hershey’s treats she was extra excited.
