Italian food has always been one of my favorite cuisines.  Growing up, my Mom would frequently make spaghetti and meatballs for dinner, complete with her own homemade pasta sauce.  The sauce is so good that my brother and his now-wife actually requested it as their rehearsal dinner meal.

My Gram also made Italian meals special, as she often made her own fresh pasta.  I remember seeing those little strips of goodness hanging on the machine, ready to be tossed into the boiling water.  You’d think my family is Italian, but we’re not; we just enjoy good food.

I often make Italian meals for my own family.  Lasagna and spaghetti with my own homemade spaghetti sauce recipe are two of the most frequent, but I’m made Chicken Piccata, antipasto salad, Chicken Parmesan, and other dishes, too.

Up until I was a sophomore in high school, I would have told you that I didn’t like Chinese food.  I know, right?  For most of my tween and early teen years I was what you might call a picky eater.  At that point I hadn’t even tried anything from a Chinese menu – other than French fries – but I was sure I wouldn’t like it.

When you’re trying to maintain a healthy lifestyle one of the biggest roadblocks can be life itself.  It often feels like there just aren’t enough hours in the day to get all the necessities done, let alone anything extra.  Things like the gym or getting a full night’s sleep sort of fall by the wayside.

I really enjoy cooking which a lot of you probably know from the number of recipe and meal ideas I’ve shared with you over time.  When it comes to lunch, though, I rarely find myself in the mood to cook something.  I also don’t usually find myself with the time to cook lunch for myself, to be honest.  By the time I’m done making lunch for Bubbles and then feeding her, the afternoon is already marching on and there are tasks that need to be completed.

Thankfully there are a number of frozen entries with which I can keep my freezer stocked.  This makes it very convenient to grab-and-go even if the “go” part is only as far as the backyard to watch Bubbles play.  Of course, convenience isn’t the only consideration when it comes to lunch.  I actually have quite a list of requirements.  I want them to be low in fat and calories, use fresh ingredients, and be a decent source of fiber and protein.  Oh – and they have to taste good (kind of the most important part).
