The other day I shared my secret about not loving to do the dishes. So meals that require minimal pots and pans and bowls are right up my alley.
My husband and I usually sit down on Sunday afternoon and do a rough meal plan for the week. It makes it easier for me because it cuts down on multiple trips to the grocery store. It also keeps us from saying “so… what do you want for dinner?” 15 minutes before dinnertime.
While discussing this past week’s meals I suggested maybe we do stuffed shells. My husband reported that he didn’t recall ever having them. That response sealed the deal for me, and I decided that stuffed shells would definitely be on the menu.
Enjoying pasta is something that has long been a tradition in my family. My brother even requested that my Mom make her spaghetti for the rehearsal dinner for his wedding and my Gram made her own homemade pasta on more than a few occasions.

Did you indulge a little during the holidays this year? I know I did. Though maybe not as much as in holidays past, as everyone has been a little under the weather the past couple of weeks so I didn’t bake as much as I usually do.
Every year I make resolutions along with the rest of the world. But this year I’m less about making a resolution and more about putting balance into my life. I have a lot of posts I plan to share with you this year on taking a lifestyle approach to a “new you”, everything from getting better sleep and making smarter food choices to how to get more active (without necessarily doing that “e” word that some of us dread).

We just found out that the weather on Halloween is supposed to be pretty rotten. And by rotten, I mean it’s going to be in the 40s with a 70% chance of rain. There may be a very soggy Elsa by the end of the night.
So before we head out to trick or treat, I’ll be making sure that everyone eats a hot, filling dinner. One of my go-to meals is homemade mac & cheese. It’s Bubbles-approved, and everyone else that has tried it, loves it. I have a few different variations, like my Buffalo Chicken Mac & Cheese, and this one for my Smokey BBQ Chicken Mac and Cheese with Bacon. Because everything’s better with bacon, right?
