Bubbles celebrated her 4th birthday back in February.  I had big plans of sharing the entire thing with you at that time, but we were all sick both prior to and following her birthday, so sharing the details kind of slid to the back burner.

Since marrying a southern boy I have been doing my best to learn more southern cooking.  One of the first things I made sure I learned was how to make cornbread, as he likes it with almost anything.  And because everyone said it was the “real” way to do it, I learned how to make a skillet cornbread recipe.

Lately I have been in the mood for my Mom’s Taco Salad.  It’s a great recipe (I’ll share it with you all one of these days), a little different than a traditional taco salad.  It’s not hard to make, but it does take a little advanced planning.
