Ever go to bake chocolate chip cookies and find that the brown sugar is hard as a rock?  Or boil eggs for deviled eggs and accidentally tear them all up while trying to peel them?  Yep, I’ve been there, too.  And it’s so frustrating!  You end up wasting money or needing to buy extra ingredients or change your plans.  I spoke to some of my blogging buddies and they’ve had similar situations.  We’d like to share with you what we’ve learned from trial and error to save you some headaches.

Perfect Hard Boiled Eggs

Place 4-6 eggs in the bottom of a small saucepan.  Cover with cold water by 1-2 inches then add 1/2 tsp. baking soda (the baking soda will make your eggs super-easy to peel).  Bring to a boil over medium-high heat; cover and remove from heat.  Let sit, covered, for 10-12 minutes.  Run eggs under cold water until cool to the touch, then peel.  (I tap my eggs on the counter and then gently roll them back and forth with my hand to crack the shell all over.)

TollyTots' Fashion Dolls From Disney's "Oz the Great and Powerful"

As a Disney-loving family we enjoy pretty much anything related to the parks or the movies.  And when those items are produced by companies we truly enjoy it makes them that much more special.  So we were excited to recently receive one of the new Oz the Great and Powerful fashion dolls from TollyTots.

Bubbles is a bit young for the movie but that didn’t stop her from trying to confiscate Theodora the moment that she arrived.  She kept asking me to open the box but I still wasn’t sure if she would be her toy or if Theodora might look better on Mommy’s desk for a bit of a work distraction.  In the end, I think I’ll be picking up a China Doll for Bubbles and Theodora will, in fact, hang out in my office.

I wrote this review while participating in a campaign for Mom Central Consulting on behalf of State Farm and I received a promotional item to thank me for my participation.

When I was in college I had the opportunity to serve as the Community Service Chairperson for our Student Government Association.  I helped to arrange community service involvement and participation for our student body with a number of local and national organizations.  Some of them were walks, some were hands-on activities like building houses, some were collecting food or supplies.

One of my favorite projects we participated in, however, was building a playground from scratch.  There was a neighborhood within walking distance of the college that had a large population of kids, but there was no place nearby for them to play safely.  So they polled the kids to find out what elements they would like to have in a new playground.  Funds were collected and then we spent 48 hours straight – even through the night – and built them a brand new play space.  It was exciting to see how much something simple could transform both a neighborhood and the people living in it. College is a wonderful experience but it also can be an adjustment.  You’re responsible for your sleep, study, and eating habits.  Getting into a schedule of making smart choices for those habits can take awhile which can really wreck your system.  Add in the extra stress from writing all those papers (oh, and trying to have some sort of social life) and it’s surprising we make it through.

It should have been no surprise to me, then, when I started having digestive issues.  It got bad enough that when I was home on a break from school I went to the doctor just to be sure there wasn’t something wrong.  No, nothing wrong other than it’s a bad idea to live on pizza and three hours of sleep.  The surprising thing for me was that she encouraged me to start taking over-the-counter probiotics.

A spaghetti dinner is one meal that is in consistent rotation in our house.  It’s one of those simple meals that’s filling and just hits the right spot.  It also doesn’t hurt that Bubbles enjoys “noodles” so it’s a meal that the whole family can enjoy.

A lot of times spaghetti ends up being a spur-of-the-moment decision.  The kind of meal where you’ve sat around asking “What should we have for dinner?” for the last 2 hours and finally everyone agrees that some sauce-covered pasta would be a great choice.  When it’s more of a planned meal, however, I like to take the time to make my own spaghetti sauce.
