A few years ago my husband and I had the pleasure of dining at Boma restaurant at the Animal Kingdom Lodge.  I had heard and read rave reviews of the place for a long time, so we made plans to eat there during one of our overnight trips.

I knew that it would be a bit of a culinary adventure for us; Boma features many African-inspired recipes, not a cuisine either of us had a lot of experience with.  But we were both pleasantly surprised at how many dishes we ended up enjoying.  Especially the chicken and soups.

Recently I caught one of the first commercials for the upcoming movie Blended.  It’s the story of two families coming together during separate trips to an African family resort, a story I can somewhat relate to.  While the vacations we’ve bonded over haven’t been African, I did have the pleasure of marrying into a beautiful family that included Ashley and Austin, and then rounding out our family with Bubbles. I was able to create a new Mini Chicken Chimichangas appetizer recipe using Kraft Fresh Take as part of a sponsored post for Collective Bias.  All words and opinions are my own.

I love experimenting in the kitchen.  At least a few times per week you can find me in the kitchen trying completely new recipes I find on Pinterest, duplicating something delicious I tried at a party, or giving our family favorites a little twist.

We frequently went out for Mexican food when we lived in Florida, but those restaurants don’t abound quite as much in Kentucky.  Because we missed those foods I started trying my hand at different entrees that we had regularly ordered: quesadillas, enchiladas, churros, chimichangas and more.  The chimichangas turned out particularly well and earned a regular place in our monthly meal rotation.

Recently while shopping at Walmart I noticed the Kraft Fresh Take kits in the cheese section.  We’ve used them in the past to change up our baked chicken or pork chops, but that day I had chimichangas on the brain.  It made me look at the packaging a little differently, wondering if I could use it to spice up our Mexican night. I participated in a campaign to create Triscuit recipes on behalf of Mom Central Consulting for Triscuit. I received products to facilitate my review and a promotional item as a thank you for participating.

I’ve always loved Triscuit crackers; they’re truly an iconic snack.  For me, it’s always been about the satisfying crunch when you bit into it.  I also like how a Triscuit holds up to whatever you decide to pile on it.

I thought the crackers were pretty perfect the way they are, but after a hundred years, there’s a new twist on Triscuits.  In addition to the traditional wheat, they’ve now added brown rice to the mix.  Taking the opportunity to tempt your taste buds one step further, sweet potatoes and red beans have been baked into some varieties, also.

Thank you to Bertolli for providing the olive oil used to make my Parmesan Roasted Asparagus recipe.  All words and thoughts are my own.

Up until the past few years, I was convinced that I didn’t like asparagus.  Granted, I couldn’t ever remember actually trying asparagus, but that doesn’t really matter, right?  You’re allowed to know what foods you’ll like and won’t like just by looking at them.  Aren’t you?

Then a few years ago we were at our local farmer’s market in Florida and lo and behold there was a whole stand of asparagus that day.  Hubby wasn’t really sure if he liked asparagus, either, but we are always looking for a new side to pair with our proteins, so we decided to go for it.  I consulted with the attendant at the market to get her thoughts on what makes “good” asparagus, and we took a bunch home.

I’m not sure if I’ve mentioned this before, but I’m kind of crazy for magazines.  I like all kinds of magazines: women’s, cooking, home decor, decorating, DIY, parenting, family, photography, local, holiday, even some fashion.  When I shop I always take a few minutes to browse the magazine racks and aisle to see any covers that jump out at me or any new publications that interest me.

Recently I was shopping at Kroger and I had a bit of a magazine surprise.  I found a display of All You!  Previously All You had only been available on the newsstand at Walmart.  But now, happily, it’s at Kroger (and other stores, too, I hear).
