A few years ago my husband and I had the pleasure of dining at Boma restaurant at the Animal Kingdom Lodge. I had heard and read rave reviews of the place for a long time, so we made plans to eat there during one of our overnight trips.
I knew that it would be a bit of a culinary adventure for us; Boma features many African-inspired recipes, not a cuisine either of us had a lot of experience with. But we were both pleasantly surprised at how many dishes we ended up enjoying. Especially the chicken and soups.
Recently I caught one of the first commercials for the upcoming movie Blended. It’s the story of two families coming together during separate trips to an African family resort, a story I can somewhat relate to. While the vacations we’ve bonded over haven’t been African, I did have the pleasure of marrying into a beautiful family that included Ashley and Austin, and then rounding out our family with Bubbles.
African Chicken Recipe
I’m always up for any excuse to try out or create a new recipe. The connection to the movie theme as well as getting to bring back the memories of our African-inspired dishes was too good to pass up, so I popped in to Walmart and picked up some of the Tyson Grilled & Ready chicken breasts and strips. I’ve used it in the past and consider it to be a great time saver.
- 1 tsp chili powder
- 1 T olive oil
- 1 T fresh chopped ginger
- 2 T paprika
- 1 T honey
- 1 T diced garlic
- 4 T lime juice
- pinch of salt
- 2 cooked chicken breasts, sliced
- Combine all ingredients except for the chicken. Mix well.
- Optional: reserve a small amount of the marinade to baste chicken.
- Add chicken to marinade and refrigerate (as long as you can, overnight is best).
- Heat a skillet over medium-high heat and cook until chicken is slightly blackened and warm through.
- Serve over couscous or other side of your choice.
The Tyson Grilled & Ready Chicken comes both frozen and refrigerated. There are also full breasts, and pre-cut strips. You can use any combination of them for this or any other chicken recipes for two (or more!).
When you shop for your chicken, be sure to pick up two bags of Tyson Grilled & Ready Chicken. You may only need one for this recipe, but when you buy two bags you can take a quick picture of your receipt and send it in to receive a voucher good for two movie tickets to see Blended. Yay for a free movie night! Check out the details on specially marked packages and their website.
What a creative idea! I love African food and this sounds great!
