I’m kind of in love with waffles lately.  Which some (my parents) might consider odd, because I didn’t care for waffles growing up.  I actually didn’t love pancakes all that much, to be honest.  If I had breakfast, I wanted eggs and toast, maybe some bacon.  But in college on Saturday mornings they had a waffle bar and I started to dip my toe into the world of waffles.  I wouldn’t say I was a groupie, but they were on my radar.

But for the last few months they’ve been on my mind more than ever.  So when I saw that they made waffle plates for my Griddler, I knew it was fate.  After weeks of being out of stock, I finally scored a set and have been a waffle-making machine over the last few days.

I love experimenting in the kitchen.  Many times when I try a recipe I’ll try it the way it’s written the first time or two, but then I like to make changes to suit my family’s tastes.  One area that I generally don’t mix things up, though, is when it comes to favorite recipes that have been passed down from family members.

Our family really enjoys good Chinese food but finding a place that checks the boxes for everyone can be a challenge sometimes.  Good crab rangoons, not so awesome sweet and sour sauce.  Or amazing lo mein, but so-so beef and broccoli.  We keep saying that we are going to try and make some of the recipes on our own but just have never gotten around to it.

This week, though, I was feeling a little adventurous and decided to finally come up with a vegetable fried rice recipe.  We were out of soy sauce so I swung by the grocery store to get a new bottle.  While I was there I also picked up a can of mixed peas and carrots and a box of Success® Rice.  It boils in it’s own bag for 10 minutes which would be just about perfect timing for me to prepare the rest of the ingredients. I was able to strike liquid gold and make our family’s favorite corn chowder recipe as part of a sponsored post by Collective Bias.

I’m not sure if chowder is mostly a New England thing or not, but I do know that I grew up eating a lot of it.  Fish chowder, seafood chowder (full of beautiful, succulent lobster), corn chowder, clam chowder, potato chowder.  If it’s a chowder, it was probably served at least once.  I was surprised, then, that chowder is not a staple in the diet of Kentuckians.

I wanted to introduce my husband’s family to the joys of milk- and cream-based soups and so decided to start with my corn chowder recipe.  When I make them clam, fish, or seafood chowder, I want it to be on a visit to Maine with fresh Maine sea creatures.  My corn chowder is also a little lighter than most others because I use 2% milk (though the bacon might make up for the use of 2%, but hey). Breakfast foods have always been some of my favorites.  Eggs, hashbrowns, pancakes, bacon.  They’re so versatile – and delicious – but I often end up serving them the same ‘ole way.  So when I saw the recipe for an Easy Bacon Frittata in Gooseberry Patch’s new cookbook “101 Farmhouse Favorites” I knew it was the first thing I wanted to try.

While I’ve always enjoyed frittatas, this was my first time attempting to make one.  I’m glad I gave it a whirl.  It was easy to complete and makes a nice change from standard breakfast or brunch fare.
