These Pumpkin Whoopie Pies are made even easier by starting with a cake mix, adding in some pumpkin, then using cream cheese frosting for filling!

There wasn’t a Big Lots in Maine when I was growing up so my first experience with the store was when I went off to college.  But there was a Big Lots not that far from campus that I visited frequently because the value and wide selection of brands was hard to beat.  When I became a Resident Advisor starting my sophomore year, Big Lots is where I would always take my residents shopping for dorm supplies, gifts, holiday decor, snacks and more. There’s a lot to enjoy this time of year.  Cooler weather means hoodies and snuggling under cozy blankets, the leaves are turning beautiful shades, pumpkin everything is everywhere.  Oh, and did I mention lots and lots of football?

Someone once told me that you should always keep a kite in your trunk.  So this is what my trunk usually looks like:

Always keep a kite in your trunk - just in case!

I like to keep at least one or two kites plus a ball, some kid-size sporting equipment, sand toys, and a lightweight stroller.  That way if the mood strikes us we can hop out and spend some time playing in a local park or even take a walk. Continue reading »

My sister-in-law Abby gave birth to my nephew Jayce a week ago, and let me tell you – she looks great!  Way better than I remember looking – and feeling – after giving birth, myself.  It took quite awhile after Bubbles was born until I felt like wearing anything other than yoga pants and a t-shirt.

Trying out new restaurants was one of my husband and I’s favorite things to do when we were living in Florida.  There were so many so close to us that we tried to get to one new place every other week or so.

Mellow Mushroom has fun decor unique to each location, like this fun Churchill Downs-inspired decor at the Middletown, KY location.

There are a lot of great ones to try here in Louisville, too; Louisville is quickly becoming known as a real foodie town.  But between having a baby and moving to the edges of the city we haven’t had a chance to try as many new ones as we’d like. Continue reading »
