This time of year I always seem to crave my grandmother’s cooking a little more than any other. Fall is when we were working on the farm and she always made sure the kitchen was full of anything and everything you could possibly want to eat.
Fall is also the gateway to holiday cooking and baking. That meant warm, hearty dinners and appetizers, cookies and brownies, fudge and donuts.
One other thing she made frequently during the fall was corn fritters. Little bites of golden brown corn-filled dough soon to be covered in rich maple syrup. Is your mouth watering yet? Mine is!
Gram’s Corn Fritters Recipe

My husband had never actually had corn fritters so I was excited to try and recreate my grandmother’s recipe for him.
- 2 eggs, beaten
- 2½ cups flour
- 2 tsp. baking powder
- 1 tsp. salt
- ¾ cups milk
- 2 T melted butter
- 1 can creamed corn
- oil, for frying
- maple syrup, optional
- Mix all ingredients together to form a wet dough.
- Heat oil in a deep skillet or deep fryer to 365.
- Drop by small spoonfuls into oil and cook 2-3 minutes per side, until deep golden brown.
- Remove to paper towel-lined plate to drain.
- Drizzle with maple syrup, if desired.
- Serve warm.
I use a small cookie scoop to drop the batter to help keep them uniform in size for even cooking. Regardless of method used, don’t make your scoops too big or the corn fritters will burn on the outside before they cook through on the inside.
Hubs ended up loving them as much as I do which made me really happy. Each fried bite is like a little bite of love and I enjoy being able to pass those special recipes on to my own family.
Corn fritters make a great appetizer or they pair really nicely with most any meal. And yes, I have eaten a bowl as a meal by itself. Go ahead and do the same, I won’t tell!
I usually don’t like when a recipe claims to be “world’s best” or whatever. But my Gram’s recipe is slightly different than other corn fritters recipes I’ve seen. I really do find these to be the best of any I’ve ever been served. I hope you like them, too!
I’ve never made any, but remember eating great ones at the El Encanto restaurant in Azusa, California. They always served them between the salad and entree. It was unique. Sadly this classic steakhouse is long gone. Margy

Do I have to empty the can of corn in the sink or is the entire can used for the recipie?
My dad has been craving these for years since his mom passed away and I am really worried about making them because I never tried them or know what it should taste like.
Any pointers would be greatly appreciated.

I’m going to have to try these; just had corn fritters for the first time this Sept. We went on vacation to South Carolina and I was encouraged to try them by my aunt and uncle who live in the south. I was so surprised by how much I enjoyed them since I am not usually a fan of anything much that even remotely resembles cornbread.

I haven’t had corn fritters in YEARS! Like 30+. But they were a big favorite when I was a kid growing up. I’ve bookmarked these and will make them one of these days when I have my great niece and great nephews. It’ll be fun to pass on the favorite.

Hi Serena! Sorry that I just saw this. I honestly am not sure how long they would last. We normally just make enough for the meal we’re having, though I do remember occasionally having them at my Gram’s for breakfast the next morning after a sleepover.

wow … came across this recipe this evening. I was going to make a corn bread, but I’m not one to have cornmeal in the house… like, never. But I did have all these ingredients and decided to make these. They’re fabulous! And just like I remember my own mom making! Thank you for a wonderful, easy, fast, and unbelievably delicious recipe .. with ingredients I usually have on hand. Needless to say … the rest of my meal will be leftovers because I have to finish these!

I have sone frozen cotn i need to use. I eonder if i can use it ibstead of the creamed corn ( anf if needed increased the milk to get the right batter texture). Thanks! Imma
Hi Imma! I’ve only ever used creamed corn, as that’s what my gram always used. I would maybe test one fritter before adding any milk, and then just add a small amount to the batter until you get the consistency you’re looking for.
About how many will that recipe yield? I haven’t had these in years. I am going to use them for a side dish for chicken gumbo

Made these for the first time. With the same recipe I made three different flavors. Original recipe for the kiddos which loved with maple syrup. Another batch I mix in chives and a bit late salt…that was ma favorite. Lastly, another portion of the batch with shredded cheese. They were all pretty tasty. Thanks for the recipe.

At about what temp would you say for the deep fryer? I have made flat corn fritters and my family likes them but I secretly don’t live them so I’m looking for a better recipe. This one looks yummy! Looks more like some corn nuggets that I’ve had and loved. So you think cheese could be added?
Right around 365 degrees for the temp. I think you could definitely add cheese!

I was first introduced to corn fritters while we lived in Florida. The restaurants there would serve the fritters with powered sugar. OMG! Delish!
I lived in Florida for a few years, and one place near us served conch fritters. I could never bring myself to try them!
Brilliant, thank you for this recipe. My mum used to make these when I was a kid. You don’t have any of your grans slice recipes do you? I’m after one my mum used to make. It has a biscuit type of base and she iced it with chocolate or mocha icing while still hit so the icing was shiny and crunchy.

My Mother made these family favorites with a sausage pattie and often sliced cukes with an oil/ vinegar dressing to balance the flavors . My kids loved them and I usually make with fresh corn in summer months . Oh so yummy
