This time of year I always seem to crave my grandmother’s cooking a little more than any other.  Fall is when we were working on the farm and she always made sure the kitchen was full of anything and everything you could possibly want to eat.

Best-ever corn fritters recipe from my Gram's kitchen to yours. They're extra yummy served with a little maple syrup for drizzling.

Fall is also the gateway to holiday cooking and baking.  That meant warm, hearty dinners and appetizers, cookies and brownies, fudge and donuts.

One other thing she made frequently during the fall was corn fritters.  Little bites of golden brown corn-filled dough soon to be covered in rich maple syrup.  Is your mouth watering yet?  Mine is!

My husband had never actually had corn fritters so I was excited to try and recreate my grandmother’s recipe for him.

Best-Ever Corn Fritters Recipe

Ingredients
  • 2 eggs, beaten
  • 2½ cups flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • ¾ cups milk
  • 2 T melted butter
  • 1 can creamed corn
  • oil, for frying
  • maple syrup, optional
Instructions
  1. Mix all ingredients together to form a wet dough.
  2. Heat oil in a deep skillet or deep fryer to 365.
  3. Drop by small spoonfuls into oil and cook 2-3 minutes per side, until deep golden brown.
  4. Remove to paper towel-lined plate to drain.
  5. Drizzle with maple syrup, if desired.
  6. Serve warm.

I use a small cookie scoop to drop the batter to help keep them uniform in size for even cooking.  Regardless of method used, don’t make your scoops too big or the corn fritters will burn on the outside before they cook through on the inside.

Hubs ended up loving them as much as I do which made me really happy.  Each fried bite is like a little bite of love and I enjoy being able to pass those special recipes on to my own family.

Corn fritters make a great appetizer or they pair really nicely with most any meal.  And yes, I have eaten a bowl as a meal by itself.  Go ahead and do the same, I won’t tell!

I usually don’t like when a recipe claims to be “world’s best” or whatever.  But my Gram’s recipe is slightly different than other corn fritters recipes I’ve seen.  I really do find these to be the best of any I’ve ever been served.  I hope you like them, too!

  1. I’ve never made any, but remember eating great ones at the El Encanto restaurant in Azusa, California. They always served them between the salad and entree. It was unique. Sadly this classic steakhouse is long gone. Margy

  2. I’m going to have to try these; just had corn fritters for the first time this Sept. We went on vacation to South Carolina and I was encouraged to try them by my aunt and uncle who live in the south. I was so surprised by how much I enjoyed them since I am not usually a fan of anything much that even remotely resembles cornbread.

  8. I haven’t had corn fritters in YEARS! Like 30+. But they were a big favorite when I was a kid growing up. I’ve bookmarked these and will make them one of these days when I have my great niece and great nephews. It’ll be fun to pass on the favorite.
