Growing up in Maine, we learned to thoroughly enjoy the warm summer weather when it presented itself.  The summers could get hot, but it didn’t happen frequently.  When they did, though, we made sure cool off with lots of frozen treats.

There was always lots of ice cream, much of it homemade.  And plenty of milkshakes and slushy lemonade, too.  What was really popular with the younger kids, though, were popsicles. Continue reading »

This BBQ Bacon Cheeseburger recipe is sponsored by DataRank and KC Masterpiece. All words and opinions are my own.

This seems to be the time of year when more and more cookouts and backyard barbeques become more frequent. And that is totally okay with me, because the foods that are served at these events – burgers, grilled pizza, roasted veggies – are some of my favorites.

When I was in high school I did a lot of grilling out for my friends during the summer. My parents’ house was a natural gravitation point for everyone, and we spent a number of summer nights with burgers around a campfire. I knew I figured that I must be doing something right when even my guy friends complimented me on my grill capabilities.

With grill plates I can thankfully grill year-round, but it’s more fun outside. There are a few good occasions for it coming up – Father’s Day, graduation parties. To have a little something special to serve, I put together this easy BBQ Bacon Cheeseburger recipe. Continue reading »

A few years ago my husband and I had the pleasure of dining at Boma restaurant at the Animal Kingdom Lodge.  I had heard and read rave reviews of the place for a long time, so we made plans to eat there during one of our overnight trips.

I knew that it would be a bit of a culinary adventure for us; Boma features many African-inspired recipes, not a cuisine either of us had a lot of experience with.  But we were both pleasantly surprised at how many dishes we ended up enjoying.  Especially the chicken and soups.

Recently I caught one of the first commercials for the upcoming movie Blended.  It’s the story of two families coming together during separate trips to an African family resort, a story I can somewhat relate to.  While the vacations we’ve bonded over haven’t been African, I did have the pleasure of marrying into a beautiful family that included Ashley and Austin, and then rounding out our family with Bubbles. Growing up, one of the things I most looked forward to during warmer months was the dairy bar opening.  One of the local dairies in our area – Houlton Farms Dairy – would open up a small store front in a neighboring town and serve homemade ice cream, milkshakes, and other delicious offerings.  Their homemade chocolate ice cream was one of my absolute favorites.

On the menu were a few other items that I really didn’t ‘get’ as a kid – treats made with sherbet.  They didn’t contain any ice cream!  I mean, why go to an ice cream shop and not get ice cream.  As I got older, though, I completely understood:  a way to indulge without blowing your healthy goals.

One of my favorite parts of baking chocolate chip cookies is the cookie dough.  I realize that you’re really not supposed to eat it with the raw eggs and all, but I live on the edge.  For me, it tastes almost better than the baked cookies!

SPLENDA Sweetners #SweetSwaps

A few years ago I found out that you can make cookie dough specifically to eat – there are no eggs, so no worries about bacteria.  I don’t make it often because while it may be safe to eat, it’s not exactly good for my waistline.  But recently I made a swap – a sweet swap, using SPLENDA® Brown Sugar Blend.
