Growing up in Maine, we learned to thoroughly enjoy the warm summer weather when it presented itself.  The summers could get hot, but it didn’t happen frequently.  When they did, though, we made sure cool off with lots of frozen treats.

There was always lots of ice cream, much of it homemade.  And plenty of milkshakes and slushy lemonade, too.  What was really popular with the younger kids, though, were popsicles.

I wanted to share with Bubbles some of the delight that the refreshing taste of a frozen treat can provide.  Banana is one of her favorite fruits and flavors, so I knew some homemade Vanilla Banana Popsicles would be a sure hit with her.

Easy Vanilla Banana Popsicles

To add a bit of flavor, I did a half-and-half mix of milk and International Delight French Vanilla creamer.  International Delight has a whole new line of sugar-free and fat-free varieties, along with new packaging, too.  Mixed with the sugar-free banana pudding mix I used, the creamer provided excellent flavor and gave the popsicles a great texture.

Ingredients:

1 cup whole milk
1 cup International Delight Sugar-Free French Vanilla Creamer
1/2 packet sugar-free instant banana pudding mix

Instructions:

  1. Whisk together all three ingredients until smooth and mixture starts to thicken.
  2. Poor mixture into prepared popsicle molds (paper cups with sticks work if you don’t have molds).
  3. Place in freezer and freeze until firm.

Bubbles had fun mixing the ingredients and helping me pour the popsicle base into the molds.  It was a quick and easy project for us.  The hardest part was the waiting!

When they were finally ready, We took our popsicles outside and sat on the steps.  The weather was perfect and we had the chance to talk and giggle while we watched the sun go down.  Definitely a great way to share a little delight.
