I don’t recall ever being served a tuna noodle casserole as a kid.  That doesn’t mean it didn’t happen, just that it never was memorable enough to mark itself in my memory.  My Mom did sometimes serve something that was affectionately nicknamed Tuna Pea Wiggle, but it wasn’t a casserole.

This Tuna Noodle Casserole recipe is one the entire family will love, even the ones that say they don't like tuna noodle casserole!

A few months ago I started to actually crave tuna noodle casserole.  I have no idea why, but the desire didn’t go away, and so I did what anyone does when they’re looking for a recipe or project idea: I visited Pinterest. Continue reading »

Back when Ashley was still in school and living with us, it was always on my mind to create diabetic friendly meals whenever possible.  This was sometimes a challenge when I was trying to cook for both a teenage girl and a tween boy.

Diabetic Friendly Meals: Roast Tilapia with Red Potatoes and Green Peppers

One of the diabetic friendly meals that we all could agree on was tilapia and baby red potatoes.  Cooking fish wasn’t something I was that familiar with back then, but I quickly found that it’s really easy to make. Continue reading »

We love Chinese food.  Back when we lived in Florida, we’d hit the farmer’s market two miles away on Saturday afternoons, and then stop at our favorite Chinese place just down the street after for takeout.

Easy Homemade Sweet and Sour Chicken recipe that's baked!

Conveniently located Chinese food is something sadly lacking from where we live now.  So when hubs mentioned he’d love it if I learned how to make more Chinese food recipes, I was happy to oblige. Continue reading »
