I don’t recall ever being served a tuna noodle casserole as a kid.  That doesn’t mean it didn’t happen, just that it never was memorable enough to mark itself in my memory.  My Mom did sometimes serve something that was affectionately nicknamed Tuna Pea Wiggle, but it wasn’t a casserole.

This Tuna Noodle Casserole recipe is one the entire family will love, even the ones that say they don't like tuna noodle casserole!

A few months ago I started to actually crave tuna noodle casserole.  I have no idea why, but the desire didn’t go away, and so I did what anyone does when they’re looking for a recipe or project idea: I visited Pinterest. Continue reading »

I love making casseroles all year long, particularly for their time-saving benefits.  They generally don’t take too many ingredients, and usually they’re ones I already have on hand.  The prep time is minimal for most recipes, and then you just put it in the oven to bake while you go take care of other tasks.

Having a few go-to casserole recipes can help simplify your holidays and keep stress at bay.  Guests drop in unexpectedly?  No problem!  They also are great gifts, too.  Trust me – there isn’t one person on your list that wouldn’t love the gift of a home-cooked meal that they didn’t have to make for themselves.

My Sausage Breakfast Casserole recipe is a mash-up of a number of different ones that I’ve tried with tweaks that make it a family-favorite.  We occasionally eat it for dinner, I make it for weekend brunch, and it gets served in the morning on Christmas while everyone recuperates from opening gifts. Casseroles are one of my favorite busy night meals.  I can put all of the ingredients together ahead of time and then just put it in the oven to cook when I need to start making dinner.  I don’t need to stand over the stove stirring any pots.  I don’t have to worry about whether or not I cooked it for 27 minutes or 32 minutes.  I can add a few more vegetables or a bit more starch to make it stretch just a bit further.  I can generally substitute ingredients based on what I have in the pantry or what is on sale at the grocery store this week.

Everyone in my home loves Mexican food.  Some Mexican dishes are more labor intensive than others.  So, when I’m having a super hectic day, I turn to this Mexicali Casserole recipe.

With the temperature dropping, are you looking for casserole recipes?

It’s been cold and rainy here so we were looking for something along the lines of comfort food.  Casserole recipes usually fit the comfort food-bill nicely!  This pizza casserole bake is comfort food with a twist – not quite mac & cheese, not quite pizza.  It’s fairly quick and easy to throw together, though, and is also easy to customize to your own personal tastes.
Pizza Casserole Bake
1 lb cavatappi pasta
4 C shredded mozzarella cheese
1 jar (16 oz) pasta sauce (I used Ragu)
1 lb ground beef
1 pkg. pepperonis
1/2 tsp. garlic powder
salt & pepper to taste
  1. Preheat oven to 350.
  2. Season ground beef with garlic powder, salt and pepper and brown in a skillet until no longer pink.
  3. While beef is browning, cook pasta according to package directions (about 10 minutes).
  4. Spread a thin layer of sauce in the bottom of a 9×13 pan.
  5. Cover the sauce with 1/2 of the cooked pasta.
  6. Cover the pasta with 1/2 of the ground beef mixture.
  7. Pour 1/2 of the sauce over the pasta.  Top with the remaining pasta.
  8. Cover the pasta with 1/2 of the cheese.  Top with the remaining beef.
  9. Pour the remaining sauce over the top and then cover with them remaining cheese.
  10. Place rows of pepperonis on top of the cheese to finish.
  11. Cover with foil (spray the foil first to keep it from sticking to the cheese) and bake for 30 minutes.  Remove the foil and bake an additional 15 minutes.

Normally when I make this to take to a potluck or gathering, I add a can of mushrooms with each layer of ground beef.  The kiddos aren’t mushroom fans, though, so I leave them out for them.  You could easily add any other pizza ingredients you’d like – sausage, green pepper, onion and bacon would all work nicely.
