While Christmas is my favorite holiday, Halloween ranks a close second. My Gram loved to cook and bake and spread that love to friends and family by entertaining and making sure everyone was always well-fed. As farmers, Halloween often came at the close of a very long and hard harvest, and a Halloween party was the perfect way to celebrate.
It started off kind of small but over the years there grew to be up to a hundred guests that came and went through their house. While I don’t throw a party of that size every year, I do like to make up a variety of Halloween treats to serve to friends and family that stop by. And this year I’ve come up with these cute Headless Horseman Graveyard snacks I wanted to share.
Headless Horseman Graveyards
- 1½ C peanut butter (creamy)
- ½ C unsalted butter, softened
- 1 tsp vanilla extract
- 2-3 C confectioner’s sugar
- In a medium bowl combine peanut butter, butter, vanilla, and two cups of confectioner’s sugar with your hands until a smooth, stiff dough forms.
- Add additional confectioner’s sugar, up to three total cups, if needed to form desired consistency.
- Roll into a ball using 2 tsp. of dough per ball.
- Place each on the lined baking sheet.
- Place in the freezer for 30-45 minutes, until well-chilled.
I started by making up my peanut butter buckeyes recipe. Instead of coating them in chocolate after I froze them, though, I dipped them in melted orange candy melts. Once the coating set, I drew on little jack o’lantern faces using an edible black marker.
That’s where you’ll want to stop until you’re about ready to serve your Halloween treats to your guests. When you are ready, there’s just a few more steps to complete the Headless Horseman Graveyards.
Peel back the lids on a few Snack Pack pudding cups. I used chocolate to look more like “dirt” but you can use whatever flavors you want. Crush up a few chocolate cookies and spread over the top of the pudding to resemble a freshly dug “grave”.

Snack Pack puddings are a huge favorite around here, and the little peanut butter pumpkins are such a simple way to add a delicious component to an already beloved snack and dessert. Great idea for celebrating Halloween in a delicious way.
