We have been on-the-go quite a bit lately.  Road trips, day trips, shopping, corn mazes and pumpkin patch visits.  And while it’s a lot of fun, preparing and packing for excursions that include a 3-year-old can definitely take a little bit of pre-planning.

I have a “Preschooler Bag” (anyone have a better name for a diaper bag for preschoolers?  I’d love to hear it) that I like to keep stocked with whatever we might need: wipes, sunscreen, an extra outfit, books, crayons, small toys, etc.  And let’s not forget the snacks.  Snacks can make or break an outing, especially if any of your family members have a tendency to get “hangry”. Bubbles has been a pretty typical toddler in her favorite food choices.  Ask her want she wants for lunch or dinner and you’ll almost always hear mac & cheese, mashed potatoes, or pizza.  Occasionally she’d eat something else, but those three options were in frequent rotation.

Recently, though, I started to figure out that she could be enticed into trying new foods in a couple of different ways.  One, if Daddy is eating it, she’ll at least try a bite.  Sometimes that bite – like in the case of peanut butter & jelly – turns into something that she’ll request on her own.  Other times, a bite is all she wants and Daddy gets to finish his own meal.

Another way that I’ve been able to add new favorites to her diet is through foods that incorporate her interests.  Animal-shaped crackers are now regular inclusions on my shopping list.  And letter-shaped pasta in tomato sauce has become a favorite of hers.  She loves looking for specific letters in each spoonful, especially the ones that spell her name. Peanut butter and chocolate are such a perfect pairing.  Growing up my mom would always make homemade peanut butter cups during Christmas and I looked forward to them every year.  I haven’t made my own peanut butter cups in years, but after moving to Kentucky I added Peanut Butter Buckeyes to the list of holiday sweets I make.  I’d had them before but they weren’t as common in Maine where I grew up.  In fact, it wasn’t until moving to Kentucky that I knew they were named after a nut!

Tasty Tuesday: Peanut Butter Cookies

I was in the baking mood over the weekend and felt like baking some cookies.  I knew if I made chocolate chip cookies I’d end up eating more of them than I wanted to, so I decided to make peanut butter cookies, which are a favorite of my husband.  I like them, too, but not so much that I’d be too tempted. They also fairly fast to pull together, and I always have the ingredients on hand.  Definitely a vote in their favor.

This is my Mom’s recipe for peanut butter cookies (they’re also a favorite of my father’s so she’s baked a few dozen in her day).  Not sure where she got it from, but it’s probably a fairly standard cookie recipe.
Peanut Butter Cookies
Recipe type: Dessert
Serves: 5 dz
 
Ingredients
  • 1 cup shortening
  • 1 cup peanut butter
  • ½ tsp. salt
  • 1 cup granulated sugar, plus more for rolling
  • 1 cup packed light brown sugar
  • 2 eggs, well beaten
  • 1 T milk
  • 2 cups flour
  • 1 tsp. baking soda
Instructions
  1. Preheat oven to 350.
  2. Whisk together the flour, both sugars, salt and baking soda.
  3. Beat in the eggs, milk, peanut butter and shortening until dough pulls together.
  4. Roll into small balls then roll the balls in sugar; place on a baking sheet. Press down slightly with tines of a fork.
  5. Bake for 12-14 minutes until cookies start to brown. Cookies will continue to cook a little while cooling.

 

They’re also very yummy when you turn them into Peanut Butter Blossoms.  Just press an unwrapped Hershey’s Kiss into the center of each cookie as soon as they come out of the oven (the tops will crack a little).
