Bubbles has been asking me for the last few days if it was Valentine’s Day yet.  In order to smooth the transition after Christmas, I kind of talked up Valentine’s Day and how it wasn’t that far away, and that how after Valentine’s Day it would be her birthday.  No need to be sad about taking down the Christmas tree, because we had two other reasons to decorate.

I’ve been spending a good portion of my days lately baking, cooking, mixing and stirring.  Every year for more than the last decade, I have put together homemade food gift baskets for friends and family alike.  I try and have them completed in early December if at all possible, so that they have most of the season to enjoy them.

One of my favorite holiday desserts to make for gift-giving are my Mom’s squares.  She has made them for as long as I can remember and they were one of the treats I always requested for my birthday or other special occasions.  She just calls them “her squares” but I think most people would consider them to be Rocky Road Squares.

Knowing that I had a lot of Christmas recipes to make over the next couple of weeks I made a trip to Walmart to stock up my pantry.  Baker’s Baking Chocolate, Jet-Puffed Marshmallows, Planters Peanut Butter, chocolate bits, sweetened condensed milk, flour, sugar – pretty much the baking aisle.  I usually make more than I plan to, and I don’t like needing to run out to pick up extra ingredients if I can help it. I’ve always enjoyed experimenting in the kitchen.  There used to be a TV show that was called something like “Just Like Mom” where kids would “cook” by making up recipes the way they thought they should be.  It was a funny show – ketchup was used in cookies more often than you would think.

In middle school I started experimenting with both different flavor profiles as well as ingredient substitution.  One of my first attempts at creating something different was with fruit muffins.  I tried different juices in place of the other liquids in muffin mixes to see if I could amp up the flavor.  For example, cranberry and blueberry muffins had cranberry juice mixed in.  From there I learned that flavored liquids could really change the overall taste of whatever I was making.

Iced Coffee Recipe: Mocha Parfait Shots

Last year I fell in love with the new International Delight Mocha Iced Coffee and shared with you a couple of coffeehouse recipes that you could make at home.  Almost nine months later and I’m still drinking my DIY iced coffees at home.  Not only does it help me save a few dollars but it’s much more convenient.  Instead of driving to a coffee shop every time I get the hankering for a cold coffee beverage I just have to reach into the fridge.

As much as I have been enjoying my ID Mocha Iced Coffee I had decided that I needed to cut back just a bit.  Summer is just around the corner and that means tank tops and swimsuits so a girl needs to watch her waistline just a bit.  I was exceedingly happy, then, when on a recent trip to the store I found that International Delight had read my mind.  There, on the shelf, was a Light version of my favorite Mocha Iced Coffee!

Peanut butter and chocolate are such a perfect pairing.  Growing up my mom would always make homemade peanut butter cups during Christmas and I looked forward to them every year.  I haven’t made my own peanut butter cups in years, but after moving to Kentucky I added Peanut Butter Buckeyes to the list of holiday sweets I make.  I’d had them before but they weren’t as common in Maine where I grew up.  In fact, it wasn’t until moving to Kentucky that I knew they were named after a nut!
