For holiday gift-giving as part of a sponsored post for Collective Bias® I made these Rocky Road Squares to give to family and friends.  All thoughts and words are my own.

I’ve been spending a good portion of my days lately baking, cooking, mixing and stirring.  Every year for more than the last decade, I have put together homemade food gift baskets for friends and family alike.  I try and have them completed in early December if at all possible, so that they have most of the season to enjoy them.

One of my favorite holiday desserts to make for gift-giving are my Mom’s squares.  She has made them for as long as I can remember and they were one of the treats I always requested for my birthday or other special occasions.  She just calls them “her squares” but I think most people would consider them to be Rocky Road Squares.

Knowing that I had a lot of Christmas recipes to make over the next couple of weeks I made a trip to Walmart to stock up my pantry.  Baker’s Baking Chocolate, Jet-Puffed Marshmallows, Planters Peanut Butter, chocolate bits, sweetened condensed milk, flour, sugar – pretty much the baking aisle.  I usually make more than I plan to, and I don’t like needing to run out to pick up extra ingredients if I can help it. Finding snacks that the whole family will enjoy can be a bit tough.  This is especially true when you’re talking about a mix of toddlers and teens.  Pureed fruit and vegetable pouches don’t do a lot for Austin and protein bars aren’t exactly appropriate for Bubbles.

However the other day I was shopping at my second home – Target – and I saw a new addition in the snack aisle.  Goldfish Puffs.  Now, I’ve tried a lot of Goldfish crackers.  I remember eating them as a kid, myself, and with having a toddler they’re a staple in our house.  We buy the original, cheddar, multi-color, graham, pretzel – all kinds, really.  But Goldfish Puffs weren’t something I had even heard of before.  You can see our whole day of shopping at Target. I was able to strike liquid gold and make our family’s favorite corn chowder recipe as part of a sponsored post by Collective Bias.

I’m not sure if chowder is mostly a New England thing or not, but I do know that I grew up eating a lot of it.  Fish chowder, seafood chowder (full of beautiful, succulent lobster), corn chowder, clam chowder, potato chowder.  If it’s a chowder, it was probably served at least once.  I was surprised, then, that chowder is not a staple in the diet of Kentuckians.

I wanted to introduce my husband’s family to the joys of milk- and cream-based soups and so decided to start with my corn chowder recipe.  When I make them clam, fish, or seafood chowder, I want it to be on a visit to Maine with fresh Maine sea creatures.  My corn chowder is also a little lighter than most others because I use 2% milk (though the bacon might make up for the use of 2%, but hey). I’ve always been, as they say, a “talker”.  There is a picture of me in fuzzy pink footed pajamas, sitting sideways in a rocking chair with my feet up on one arm; the cord of the phone is stretched from the wall to my little hand, and I’m twirling a strand of hair.  I tried to find it to share with you but it may still be in the boxes of photos that my Mom has for me.

I’m not sure whom at the age of 4 I needed to talk to – and so casually – but that clearly was just the beginning bloom to my gift of gab.  As I got older I remember quite a few marathon phone sessions with friends.  Back then texting didn’t exist, so you couldn’t just send three or four words back and forth electronically.  You had to stay on the line to complete a conversation.

While I may not spend quite as many minutes (hours) on the phone now as I did then, I do rack up my share of minutes each month.  With my parents living in Maine, not only do I like to check in on them regularly, they also like to talk to Bubbles on the phone quite often, also.  I had always felt like we had a fairly decent cell phone plan – until last summer, that is.  We finally took the plunge and upgraded to smartphones with data plans.  I knew our bill would increase but I didn’t realize by just how much.
