Bubbles starts kindergarten this week!  She has asked every day for a week if it’s time to start yet, which with as often as we’ve had school kick-off events feels like it has.

When I started blogging full time, I realized that I was going to need to schedule my day a little differently, even though I had been working from home for a few years.  I started getting up early in the morning before everyone else to get some quiet writing done and check a few other tasks off my to-do list.  As I no longer had conference calls to worry about, that left my afternoons and evenings a little more flexible for family time.

When I was elementary school-aged and younger, I spent many summer and weekend nights sleeping over at my grandparents’ house. There was just so much to do down there, from fishing to picking berries to baking with my Gram. And as my brothers and cousins were born, they added to the mix, until our sleepovers counted six grandkids all spread out over the floor.

In the mornings, Gram always cooked us breakfast, though breakfast seems like an insignificant word for what she cooked. Everyone had their favorites, and everything was cooked to order: eggs were fried, scrambled, made into omelets, or in my case fried but egg white-only. And of course, there was the homemade toast with real butter.

I love making casseroles all year long, particularly for their time-saving benefits.  They generally don’t take too many ingredients, and usually they’re ones I already have on hand.  The prep time is minimal for most recipes, and then you just put it in the oven to bake while you go take care of other tasks.

Having a few go-to casserole recipes can help simplify your holidays and keep stress at bay.  Guests drop in unexpectedly?  No problem!  They also are great gifts, too.  Trust me – there isn’t one person on your list that wouldn’t love the gift of a home-cooked meal that they didn’t have to make for themselves.
