Roast Tilapia with Red Potatoes
  • 2 oz fresh tilapia
  • ½ tsp. paprika
  • 3 oz red-skin potatoes, quartered
  • ½ cup sliced green bell pepper
  • 1 tsp. lemon juice
  • Pinch of salt substitute
  1. Place tilapia in an oven-safe dish, and season with paprika.
  2. Add quartered red potatoes, green pepper, and lemon juice.
  3. Sprinkle with salt substitute.
  4. Cook in oven at 350°F for 45 minutes or until fish reaches an internal temperature of 145°F and vegetables are fork-tender.
