When we tailgate, I like to provide a lot of options.  Appetizers, entrees, desserts, beverages – I want my family and friends to leave feeling like they couldn’t eat another thing even if they wanted to.  It’s a trait I picked up from my Gram, who always said “Your plate is looking a little empty” no matter how much was left on your plate.

Over the weekend, we were planning to watch a lot of football.  So of course I needed to plan a lot of food to go with it!  I decided to run to Meijer to pick up everything I needed for my Buffalo Chicken Dip (always a crowd-pleaser) and my Mom’s Ice Cream Dream Squares, one of my absolute favorite desserts.

Ice Cream Dream Squares Recipe

Before I left, I made sure to log into my Meijer’s mPerks app to see what savings were available.  Having coupons and sales at my fingertips is great and can help with meal planning if you like to cook based on what’s on sale.  As I looked down through the coupons I found one for Kraft Shredded Cheese, which was perfect, because it’s a key ingredient in my Buffalo Chicken Dip!

Buffalo Chicken Dip - Great for Tailgating!

Buffalo Chicken Dip

Ingredients
  • 1 pkg. (8oz) Philadelphia Cream Cheese, softened
  • ½ cup Kraft Shredded Cheddar Cheese (I use the Triple Cheddar Blend)
  • ½ cup buffalo sauce
  • ½ cup Kraft Ranch Dressing
  • 2 cups shredded cooked chicken
  • extra shredded cheese for sprinkling
Instructions
  1. Preheat oven to 350 degrees.
  2. In a small bowl, mix buffalo sauce and ranch sauce together until well-combined.
  3. Add softened cream cheese and blend well.
  4. Mix in ½ cup of shredded cheddar cheese.
  5. Gently fold in cooked chicken until just combined.
  6. Spray cooking dish (ramekins, a small pie plate, etc.) with non-stick cooking spray.
  7. Spread the chicken mixture in prepared dish, then sprinkle with shredded cheese. Bake for 20-25 minutes, until hot and bubbly.
  8. Finish by placing under the broiler for 3-5 minutes.

Once I had squared away everything I needed for the Buffalo Chicken Dip – including celery and tortilla scoops for dipping – I turned to what I would need for my Mom’s Ice Cream Squares.  Honestly, I’m not sure what the correct name for them is.  Sometimes she called them Dream Squares, sometimes Ice Cream Squares.  I just called them delicious.

Dream Whip & Pudding are found together at Meijer

One of the ingredients is called Dream Whip.  Not everyone is familiar with it, but it can be found with the pudding and gelatin mixes (see above).  It can be used for a lot of different things, including a yummy whipped topping, which is how it’s used here.

Ice Cream Dream Squares

Ice Cream Dream Squares Recipe

Ingredients

  • 2 cups crushed crackers
  • 1 1/3 sticks butter, melted
  • 3 T sugar
  • 2 boxes vanilla Jell-O Instant Pudding mix
  • 1 quarter vanilla ice cream, slightly softened
  • 2 cups whole milk
  • 2 envelopes Dream Whip
  • 1 cup whole milk
  • 1 Heath candy bar, crushed

Directions

  1. Place crushed crackers and sugar in a medium bowl; combine.
  2. Pour melted butter over crumbs and mix until butter is fully incorporated.
  3. Press cracker mixture into the bottom of a 9×13 pan.  Set aside.
  4. In a large bowl beat softened ice cream, both boxes of pudding mix, and 2 cups of milk until thick.
  5. Pour ice cream mixture over the cracker crust.  Set aside.
  6. In a small bowl, beat 2 envelops of Dream Whip and 1 cup of milk together until fluffy (I use the whisk attachment on my stand mixer for ease).
  7. Spread over ice cream mixture, coating entirely.  Sprinkle with crushed candy bar.
  8. Cover with plastic wrap and refrigerate at least 4 hours or overnight before serving.
