We’ve all had one.  One of those days where nothing goes our way and all we really want to do is grab a spoon and pint of ice cream and tell the world to take a number.

Alexander has had one of those days.  It starts out with gum in his hair, and just gets worse from there.  And when he attempts to get a little sympathy from his family, he doesn’t find anyone to commiserate with him.  Soon, though, each member of Alexander’s family finds themselves struggling with their own terrible, horrible, no good, very bad day.

Crustless Quiche Recipe

In the movie, Alexander’s father Ben serves up a crustless quiche recipe for his family.  I think you’ll find this recipe so easy that even if you’re having a horrible day and have little time (or patience) to put dinner on the table, that you’ll be able to pull it off without much trouble.

Alexander and the Terrible, Horrible, No Good, Very Bad Day

Crustless Quiche Recipe

In a medium skillet, melt butter and oil together; add in mushrooms and onion.  Saute until tender, then add in the spinach and continue to cook until the liquid has evaporated.  In a bowl, whisk your eggs, milk, cream, salt and pepper, then add in the cheese and mushroom/spinach mixture.  Cook at 350, and then serve!
