I received a gift basket from Nutella as a thank you for sharing my National Pancake Day smile. All thoughts and words are my own.
Today is National Pancake Day! How fun, right? I love that there are days throughout the year to celebrate delicious and classic foods.
We enjoy pancakes, and not just for breakfast; we have them for lunch and dinner, too. Sometimes just by themselves, and sometimes paired with scrambled eggs, sausage or bacon, maybe even a few hashbrowns. My stomach is seriously growling now just thinking about it.
But because it’s National Pancake Day, let’s celebrate pancakes by themselves. Well, with a topping, of course. And what better way to top a pancake that with delicious Nutella?
Nutella wants everyone to join them to #ShareTheHappy today by topping your pancake with a happy Nutella smile. I love to put Nutella on just about everything – including a spoon – so this was a challenge I was happy to take up. And Bubbles loves when I surprise her with “fun” food, so she was really excited to be served a smiling pancake.
Fluffy Pancake Recipe
We made the fluffy pancake recipe that I’ve been using for awhile that I originally found on AllRecipe. The pancakes are nice and light and yummy, the perfect base for Nutella.
- ¾ C milk
- 2 T white vinegar
- 1 C flour
- 2 T sugar
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 egg
- 2 T butter, melted
- Combine milk with vinegar in a medium bowl and set aside for 5 minutes.
- Mix flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Whisk egg and butter into milk/vinegar mixture.
- Add the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet over medium heat; spray with cooking spray.
- Pour ¼ cupfuls of batter onto the skillet, and cook until bubbles appear on the surface.
- Flip with a spatula, and cook until browned on the other side.
I actually used my pancake pen that the kiddos got me for Christmas. It’s great for making perfect circles and also fun designs, spelling out their names, etc.

My favorite way to use Nutella is to put it on banana slices and then in the freezer for 1/2 hour. My granddaughter and I love these treats. We both eat gluten free.
