Thank you to Gooseberry Patch for providing us with a copy of the new 101 Stovetop Suppers cookbook which inspired this spaghetti with homemade meatballs recipe.

I’ve mentioned before that spaghetti is one meal that we have fairly regularly.  It’s hard to get tired of noodles covered in delicious sauce, sprinkled with Parmesan cheese, and paired with some garlic bread.  I’m not sure if spaghetti is considered a comfort food, but if it’s not, it absolutely should be.

I do usually brown some ground beef or turkey to add to the sauce, and occasionally I’ve even picked up a bag of frozen meatballs to warm up in the sauce.  But for some reason, I don’t recall ever making homemade meatballs specifically for spaghetti.  I’ve made them plenty of times as part of my Mom’s German Meatballs recipe, but that’s it.

Homemade Meatballs Recipe from Gooseberry Patch 101 Stovetop Suppers Cookbook

After seeing a recipe for homemade meatballs and sauce in the new Gooseberry Patch 101 Stovetop Suppers cookbook, though, I figured it was time to change that.  I cooked our normal pasta and used my own spaghetti sauce recipe as I had a few jars in the freezer.  But I made the meatball portion of Mom’s Spaghetti & Meatballs as was submitted to Gooseberry Patch by Elaine Lucas.

Homemade Meatballs
Cuisine: Italian
Serves: 4-6

Ingredients
  • 1 lb lean ground beef
  • ½ C shredded Cheddar cheese
  • 2 eggs, beaten
  • 1 slice white bread, crumbled
  • ½ tsp. garlic salt
Instructions
  1. Combine all ingredients in a large bowl; mix well, using your hands.
  2. Form meat mixture into 2" balls.
  3. Add uncooked meatballs to spaghetti sauce of choice.
  4. Simmer over medium-low heat for about 30 minutes, turning occasionally, until meatballs are no longer pick in the middle.
  5. Serve over cooked spaghetti.

The meatballs aren’t the only recipe in the 101 Stovetop Suppers cookbook that looks good.  I also plan to try the Dijon Beef Stew.  It’s nice to have a collection of single-skillet meals and desserts to choose from.  It definitely helps get dinner on the table faster.  And on days like today – when the temperature feels like it’s only slightly cooler than the surface of the sun – it’s nice to not need the oven and increase the temperature even further.
