Pumpkin Whoopie Pies

Ingredients
  • 1 cup canned pumpkin
  • ½ cup butter, softened
  • 2 eggs
  • ½ cup milk
  • 1 box spice cake mix
  • 1 can cream cheese frosting
Instructions
  1. Preheat oven to 375.
  2. In a large bowl beat pumpkin and butter until smooth.
  3. Mix in eggs, milk and cake mix.
  4. Stir until just combined; beat on medium for 1-2 minutes until fully mixed.
  5. Line a baking sheet with parchment paper; spray with cooking spray.
  6. Use a cookie scoop and place uniform scoops of batter on sheet (12 per baking sheet).
  7. Bake for 15 minutes until puffy.
  8. Let cool.
  9. Spread a pumpkin "cookie" with frosting; top with a second "cookie".
  10. Repeat until you've made all the whoopie pies.
