Pumpkin Whoopie Pies
- 1 cup canned pumpkin
- ½ cup butter, softened
- 2 eggs
- ½ cup milk
- 1 box spice cake mix
- 1 can cream cheese frosting
- Preheat oven to 375.
- In a large bowl beat pumpkin and butter until smooth.
- Mix in eggs, milk and cake mix.
- Stir until just combined; beat on medium for 1-2 minutes until fully mixed.
- Line a baking sheet with parchment paper; spray with cooking spray.
- Use a cookie scoop and place uniform scoops of batter on sheet (12 per baking sheet).
- Bake for 15 minutes until puffy.
- Let cool.
- Spread a pumpkin "cookie" with frosting; top with a second "cookie".
- Repeat until you've made all the whoopie pies.
