Banana Nut Bread with Brown Sugar Topping

Ingredients
  • For the Bread:
  • 1.5 C flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ C chopped walnuts
  • 3 overripe bananas, mashed
  • ½ C granulated sugar
  • ¼ C packed light brown sugar
  • 1 egg, lightly beaten
  • ⅓ C canola oil
  • 1 tsp. vanilla
  • ½ tsp. nutmeg
  • ½ tsp. cinnamon
  • For the Topping:
  • ⅓ C packed light brown sugar
  • 2 T flour
  • ¼ tsp. cinnamon
  • 1 T butter
Instructions
  1. Preheat oven to 350.
  2. Grease a loaf pan with Pompeian Grapeseed Oil Spray.
  3. In large bowl, whisk together the flour, baking soda, baking powder and salt.
  4. Mix in chopped walnuts; set aside.
  5. In a second bowl, beat together mashed bananas, sugar, brown sugar, oil, egg, vanilla, nutmeg and cinnamon. Gently stir the banana mixture into the flour mixture until just combined.
  6. Prepare the topping by mixing together the brown sugar, flour, and cinnamon. Using your fingers, cut in the butter until the mixture resembles coarse sand.
  7. Fill prepared bread loaf pan with batter. Sprinkle topping over the wet batter.
  8. Bake for 45 minutes or until a tester or knife comes out clean.
