Parmesan Roasted Asparagus

Ingredients
  • 1 bunch of asparagus, woody ends removed
  • Bertolli extra virgin olive oil, for drizzling
  • salt and pepper to taste
  • ¼ cup grated Parmesan cheese
Instructions
  1. Preheat over to 400.
  2. Remove the woody ends from the asparagus and line them up in a baking sheet.
  3. Generously drizzle asparagus with EVOO.
  4. Sprinkle with salt and pepper. Use a little more than you think you need.
  5. Roast asparagus for 15 minutes, until firm-tender.
  6. Remove from oven and shake on Parmesan cheese.
  7. Return to oven and roast an additional 3-5 minutes.
