Mom's Meatloaf

Ingredients
  • 2 eggs, beaten
  • ¾ C crushed saltine crackers
  • ¼ C onion, diced
  • ¼ C green pepper, finely diced
  • 8 oz. can tomato sauce
  • 2 T Worcestershire sauce, divided
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1½ lbs. lean ground beef (90/10)
  • ½ C ketchup
  • 2 tsp. mustard
  • 2 T brown sugar, packed
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a 9"x5" loaf pan with aluminum foil.
  3. In a large bowl, stir together eggs, cracker crumbs, onion, green pepper, tomato sauce, 1 tablespoon Worcestershire sauce, salt, and ground black pepper.
  4. Add beef; mix well with your hands. Form into a loose loaf shape.
  5. Place beef mixture in loaf pan; reshape as necessary.
  6. Bake, uncovered, for one hour.
  7. Combine ketchup, mustard, brown sugar, and 1 tablespoon of Worcestershire sauce in a small bowl.
  8. Spread sauce over meatloaf; return to oven and bake an additional 10-15 minutes.
