In a small bowl add cornstarch and chicken; toss to coat. Let sit 10 minutes to adhere.
Heat 2 tablespoons of olive oil in a skillet over medium.
Add chicken and cook 8 minutes, turning occasionally, until lightly browned and cooked through.
In a medium sauce pot whisk together brown sugar, soy sauce, hoison sauce, vinegar, ketchup, sesame oil, brown sugar, ground ginger and water. Bring to a boil, whisking constantly, and cook for 1 minute.
Add browned chicken to the sauce and cook another 1-2 minutes, stirring to completely coat the chicken.
Serve over white rice and top with sesame seeds, if desired.
